Chicken Pinwheels with Garlic, Herb & Tomato Linguine
Ingredients:
4 Chicken Breasts
1 Large Onion
Two tins of tomatoes
Splash of leftover red wine
4 tbsp Fresh Basil
4 Cloves of garlic
Mixed Herbs
Linguine (preferably fresh)
2 tbsp Sun Dried Tomatoes
Cream Cheese.
4 tbsp Fresh Basil
Plenty of tin foil.
Method:
1. Roughly chop the sun-dried tomatoes.
2. Place each chicken breast between to sheets of cling film and flatten evenly with a rolling pin so each breast is no more that 2cm thick.
3. Spread the cream cheese and chopped sun-dried tomatoes evenly over one side of the Chicken breast.
4. Place each chicken breast on a sheet of tin foil, roll up the chicken breast like a Swiss Roll with the filling on the inside, secure with a toothpick
5. Tightly wrap the tin foil around the rolled up chicken breast to hold it in shape, twist each end.
6. Roughly chop up the onion then place into a food processor with the tinned tomatoes, Garlic and mixed herbs. Blend till smooth.
7. Put a pan of water on the hob and bring to the boil.
8. Place the roll up chicken breasts into the boil waters and leave to simmer for 25 minutes.
9. Meanwhile put the tomato and onion sauce mixture in a pan and gently simmer.
10. Add a splash of wine, black pepper and herbs such as Marjoram, Oregano and Thyme to taste - keep tasting and added more herbs, black pepper and wine until you achieved the perfect balance for you palate.
11. Simmer until you the tomato sauce is the consistency of Double cream.
12. Cook the Linguine of the required time.
13. Once the Chicken has been on for 25 minutes, remove from the pan, unwrap from the foil as slice across each chicken breast (is you would a Swiss Roll). The Chicken breast will have cheese and tomato spirals inside.
14. Share out the linguine between four plates, pour the tomato sauce equally onto each plate then place the chicken slices on top of the each place and then
15. Serve with a fresh basil garnish.
