GULAB JAMUN Indian sweet dish

Makes about 30

Ingredients
1 lb sugar
20 fl oz water
 8  oz milk powder
1 oz self raising flour
1 oz plain flour
1/4 Teaspoon ground cardamom
1/4 teaspoon ground nutmeg
2 oz melted butter
pinch saffron
1/2 oz desiccated coconut
4 fl oz milk
20 fl oz cooking oil for frying.


 Method:

1.     Place sugar in a pan, add water bring to the boil then lower the heat
and simmer for 5 min

2.     Place milk powder in a mixing bowl add self raising and plain flour cardamom, nutmeg, melted butter saffron and coconut, mix well gradually adding the milk.

3.     Divide dough into 30 equal  parts and shape into balls.

4.     Heat the oil in a deep pan until very hot, then turn down the heat to a simmer.

5.     Place Gulabs 4 at a time in the oil and fry until deep brown.

6.     Remove and place on kitchen towel.

7.     Add the Gulabs to the sugar syrup and soak for 30 min.

8.     Serve with plain yogurt if like.

The only wine with this has to be Muscat, try Campbells Rutherglen Muscat £9.01 (35cl)
