Ginger Chicken

Ingredients:

2 cloves of garlic
l medium onion chopped
2 1/2 tablespoons of flour seasoned
1 1/4 lb chicken breast or thighs boned
4 tablespoons olive oil
1 1/2 inch root ginger peeled and grated
1 3/4 pints of chicken stock
1 egg yolk
1 tablespoon of cream
2 tablespoons fresh parsley or rosemary optional

Method:

1. Put a little of the oil in a pan and fry the onions and garlic until soft

2. Cut the chicken into roughly 2 inch pieces and toss in seasoned flour until well coated.

3. Leave for a few minutes. Add the rest of the oil to the pan and fry the chicken stirring occasionally until nearly cooked and browning.

4. Peel and grate the ginger. Stir into the pan with the remaining flour and the stock bring to the boil and simmer for a few minutes until the chicken is tender and the sauce has thickened.

5. Mix the egg yolk with the cream and carefully stir into the sauce.

6. Stir in the parsley or rosemary(optional)
