Goan King Prawn Curry with Pilau Rice

King Prawn Curry Ingredients
1 Tbsp Whole Peppercorns (two teaspoons) 1 Tbsp Coriander seeds 2 Tsp Cumin Seeds 2 Gloves of Garlic 1 Tsp Ground Turmeric Fresh Coriander (chopped) 2 onions 1 Red Pepper 1 Tin of chopped tomatoes 1 Tin of coconut milk. 600 grams of king prawns (frozen or fresh) Mild curry powder 3 Fresh Chillies (chopped) 1 Tbsp Ground Cumin 2 Tsp Ginger 2 Fish Stock cubes (pref Knorr). 1 tsp Sugar (optional) Natural Yogurt

Basmati Rice 5 Cardamoms Ground Turmeric 3 Bay Leaves |
Method
The Curry:
1.) Defrost the prawns if frozen, stir in a tablespoon of yogurt, sunflower oil and mild curry powder and chopped coriander, ensuring all prawns are equally covered. Put to one side.
2.) Put the Whole Peppercorns, Coriander seeds, Cumin Seeds and gloves of garlic into a pestle and mortar with half a team spoon of water. Grind the seeds to get to form a curry paste.
3.) Chop the onion and to the frying pan – cook the onion for 3 minutes
4.) Stir in half the curry paste and the Red Pepper and continue to stir the pan
5.) Once the onions are cooked add the tinned Tomatoes and Coconut milk to the pan.
6.) Stir in the rest of the curry paste, ginger, Turmeric, Curry Powder and chopped chillies.
7.) Lower the heat and simmer for 10-15 minutes – begin cooking the rice as below.
8.) Add the rest of the coriander and the stock cubes.
9.) Simmer for another 10 minutes or until the sauce is the right constituency.
10.) Stir in the prawns and yogurt marinade
11.) Ensure heat is the lowest setting and simmer for a further 5 minutes before serving.
The Pilau rice.
1.) Crush the cardamoms
2.) Put a pan of water on the hob and bring to the boil
3.) Rinse the rice thoroughly under cold water
4.) Add the turmeric, bay leafs and cardamoms to the water
5.) Add the rice to the water
6.) Fill up the kettle and put on to boil.
7.) Cook the rice for the required time (approx 10 mins)
8.) Rinse the rice under the boiling waters and leave to drain.
