Hearty Vegetable Pie (Vegetarian)
(Serves 6)
Ingredients:
3 tablespoons oil
3 Carrots Chopped
10 oz button mushrooms
1 red pepper
1 yellow pepper
3 sticks of celery sliced
3 clove of garlic crushed
14oz tin chopped tomatoes
14oz tin red kidney beans, drained and washed
8oz Breadcrumbs
6oz cheddar cheese.
Method:
1. Heat oil in a large saucepan,Stir in carrots, onions, mushrooms, peppers, celery and Garlic, put on the lid and cook (not to hot) for abt 15min until just tender.
2. Stir in chopped tomatoes, kidney beans and season to taste.
3. Simmer on a lowish heat for about 20 min then remove from the heat.
4. Mix together breadcrumbs and cheese. Stir half of the mixture into the vegetables.
5. Tip vegetable mixture into a shallow ovenproof dish sprinkle the rest of the breadcrumbs and cheese on top and bake for 20-30 minutes at 180c or until brown on top.
A complete meal in itself!
