Joe's crab cakes:

Ingredients:

300gm white crab meat
2 medium-sized King Edward potatoes
6 tablespoonfuls white bread crumbs (home made is best from stale bread)
Grated rind of a good sized lemon
1 medium sized onion, finely chopped
1 large egg
A little good olive oil
 
Method:

Peel and boil the potatoes.Mash and put into a pyrex bowl.
Finely chop the onion, add to the bowl.
Add the grated lemon rind and a good squeeze of the lemon juice.
Add 4 spoonfuls of the breadcrumb.
Add the crabmeat.
Mix all well
Add a good pinch of black pepper.
Add the egg.
Mix all well
 
In the meantime heat the oil in a frying pan. medium heat.
Take a handful of the mixture and roll into a ball. Then flatten the ball into a patty about 2cm thick (3/4 " in old money).  
Sprinkle some of the remaining breadcrumbs into both sides of the patty and pat well in.
Fry gently until a deep golden colour, turn over and fry the other side.
 
Serve hot with a glass of cold Chablis Premier Cru Fourchaume 2005.
Also delicious cold with or without said cold Chablis.
 
If you like your food spicy, add a pinch of chilli paste to the mix (if you must).
