Jolly Winter Trifle

Ingredients:

2  Swiss rolls (Any flavour)2 Pkts unmade Jelly (1 Blackcurrant and 1 Raspberry)
1 225gr Punnet Blueberries1 150gr
Punnet Blackberries
1 Punnet Raspberries or other soft fruit
1 500gr Tub Vanilla Custard (or homemade if preferred)
1 Cup Sherry, Port or Red Wine

Packet of Almonds (optional)
 
Method:
 
1. Cut swiss roll into roughly 2 cm slices and line a large glass or  other bowl with them.
2. Pour the alcohol evenly over the swiss roll.

3. Wash and dry fruit then add to the bowl so that it sits in the cake.

4. Dissolve the jellies as instructed on the packet using only 2/3rds of the water.

5. When completely dissolves cool then mix together and add to the Trifle.

6. Set aside in the fridge or cool place to set.
7. When the Jelly is set tip the custard on top serve as it is or with cream.
8. Add fruit or almonds to the top of the custard (optional)

 
Top Tip: Make up to the Jelly stage the day before to give time for it to set.
