Masala Prawns (Thanks Asif Nulwala)

Ingredients

300g frozen prawns
1 bunch spring onions
1 tsp garlic paste
1/2 tsp salt or to taste
1/1 tsp cumin powder
1/2 tsp chilli paste
2 tsp oil
1 medium tomato

coriander leaves and lemon
(for garnish)

METHOD:

1      Remove the prawns from the freezer and hold the packet under hot running water for a few
        minutes

2      Finely chop the spring onions and tomato. Keep separate.

3      Heat the oil in a saucepan over a medium heat. Add chopped onion, garlic, cumin powder,
salt, chilli paste and fry for 1-2 minutes.

4      Then add the chopped tomato and fry for another 1-2 minutes.

5       Finally add the prawns and lower the heat. Allow prawns to cook for 10-15 minutes. Do not
over cook as they will become tough.

6       Serve hot garnished with wedges of lemon and chopped coriander leaves.
