New Orleans Shrimp Creole

 
Ingredients:

1 cup chopped onion
1 cup chopped celery 
1/2 cup chopped green pepper
4 teaspoons butter or oil
3 cloves of garlic chopped
2 teaspoons flour
3 teaspoons chopped parsley
3 bay leaves
1 teaspoon salt
1/4 teaspoon cayenne pepper or to taste
2 1/2 cups chopped tomatoes
3 lb large cleaned raw prawns
 
Method:

 
1. Melt the butter or oil in a pan and sauté the chopped onion, celery, and green pepper
for about 5 min then stir in the garlic and fry another 5 min.
2. Remove from the heat stir in the flour, parsley, bay leaves, salt, cayenne pepper and the chopped tomatoes.
3. Allow to simmer slowly for 15 min then add the prawns, cover and simmer for another 30 min.
 
Serve on rice and a good not too oaky Chardonnay such as the 2008 Chardonnay from from
Casillero del Diablo
