Okra With Lamb

(4 servings)

 
INGREDIENTS
2 Lb Okra
3 tablespoons oil
2 large Onions
1lb minced lamb
3 green peppers
Juice of 1 lemon
3 cups water 1 teaspoon salt

3 large tomatoes
 
For cooking the Okra
1/2 cup of vinegar
3 tablespoon of salt
 

METHOD

1.     Cut the tops of the okra and put into a pan with the vinegar and salt mix together and allow to stand for 1/2 hour.

2.     Place the oil and onions in a pan and saute on a low heat until soft.Add the meat and saute for 5 minutes more stirring now and then add salt and 1 cup of water cook for 20 min.

3.    Remove from the heat and when cooled a little spread over the bottom of an ovenproof dish with lid. Cover with a layer of thinly sliced tomatoes then a layer of Okra. Repeat.

4.     Mix lemon juice, salt, 2 cups water,and onions Add to pan put on the lid cook in a moderate oven for 40-60 min until cooked.

 

Recommended wine with this dish is a fabulous Red Burgundy (Pinot Noir) Chorey-les-Beaune "Marvine" 2006 at £13.95 a bottle (agood Burgundy is not cheap) Read the review
