Spaghetti Bolognese (Andy T's style)
Ingredients:
1 Onion Chopped.
500gMinced Beef
3 slices of back bacon (roughly chopped)
4 Gloves of Garlic
Mixed Herbs (fresh or dried) inc Basil, Oregano, Thyme, Marjoram
2 Tins of Chopped Tomatoes
Red Pepper
Red Wine
Cup of water (a light vegetable stock if possible)
Milk
1 tsp Sugar
Black Pepper
Method:
1.) Heat the oil gently in a large saucepan.
2.) Add the chopped onions and cook until the onions soften
3.) Add the minced beef and brown.
4.) Add the bacon and cook for a few minutes
5.) Add the chopped tomatoes and splash of red wine and stir in.
6.) Chop add the red pepper and herbs.
7.) Turn out the heat and gently simmer
8.) Add black pepper to your personal tastes (I like lots)
9.) Occasionally stir and as the sauce dries top up with a 50/50 water/red wine combination.
10.) After a minimum of 30 minutes remove from the heat and serve.
1st Top Tip: Use fresh pasta if possible, but if not try the egg pasta available from Tesco.
2nd Top Tip: add a splash of milk, whilst simmering
I don't usually bother measuring anything out exactly, just add ingredients and keep tasting it.
