Stuffed Green Pepper (Turkish)
(Serves 8)
Ingredients
8 Green Peppers
1/4 cup olive oil
1 cup water
Filling
1 cup uncooked rice
6 medium onions
2 tomatoes
3/4 cup olive oil
2 tablespoon currents
1 tablespoon pine nuts
Small handful mint leaves
Large handful dill
1 Teaspoon mixed spice
1/2 cup water. teaspoon black pepper
Method
1. Allow the rice to stand in hot water until the water cools. Then drain the rice and wash it several times.
2. Put in 3/4 cup of olive oil and chopped onions in a pan, then sauté on a low heat until the onions are transparent. Add the rice and simmer for 10 minutes more.
3. Add water chopped tomatoes, currents, pine nuts, black pepper, spices, mint and dill cook for 15 minutes then remove from heat.
4. Cut of the tops of the peppers to form lids and remove all the seeds.
5. Stuff the peppers with the mixture and replace the tops. Place upright in an Oven proof dish.
6. Add the water and olive oil then cook for about 50 minutes on a medium heat.
7. Remove from the heat and serve.
